You can set a default commission that applies to all restaurants, then override it for specific stores.
Default commission (all stores):
Go to Payment Models
Under "Commission", choose the type:
Percentage — e.g. 5% of every order
Flat Fee — e.g. $0.50 per order
Both — e.g. 3% + $0.30 per order
Click Save
Per-store commission override:
Go to Payment Models
Scroll to "Restaurant Payment Status"
Each store shows its commission rate with a "Default" or "Custom" badge
Click Edit next to any store
Set a custom commission type and rate
Click Save
To revert to default, click Reset to Default
How commission is collected:
For card payments: Commission is automatically deducted as a Stripe application fee before the restaurant receives their payout
For cash payments: Commission is tracked in the Commission Report — you'll need to collect it separately (e.g. monthly invoice)
